André Butier, founder and renowned French chef
André Butier was born in France and studied cookery at a private college in Giel before finishing off his training under Pierre Portier, who was also nominated one of the best chefs and sommeliers in France. André, who was ranked among the best apprentice cooks in France, served in a number of prestigious restaurants in Paris, including La Pérouse and the Intercontinental Hotel. His passion for adventure and challenges led him to England and Canada before he settled in Quebec in 1975. From 1977 to 1991, André received enthusiastic reviews when he served as the executive chef at the Château de l’Aéroport de Mirabel, at the Château Champlain, and at the Château Frontenac. He opened Les Fins Gourmets du Nord with his wife Élaine Arel in 1993.

Awarded a 4th diamond by the Canadian Automobile Association (CAA) for the Château Frontenac, with a special mention for the quality of the food.
